Bacon Risotto

There are huge "blind spots" inward my cooking repertoire, like various herbs that I've never been introduced to, or spices that picky-picky married adult man refuses to eat too as thence inwards that house is e'er the financial restrictions that keep me from trying sure foods.

I'm non sure which of these categories risotto falls into (I've never even out tasted it before today)  but I'm guessing that the $10 cost tag for a 36 ounce scandalise of Arborio rice was role of the "hold up". I know I testament motility on a search for a more than reasonable source, inward the well-nigh future, for this specialty rice since we liked it thence much.

This recipe came from allrecipes.com too as it is absolutely delicious. I am truly looking forwards to reheating it for tomorrows lunch!!
1/2 pound bacon (fried, drained too as crumbled)
v cups chicken stock
ii tablespoons butter
1/2 onion, diced
4 cloves garlic, minced (see note)
1½ cups Arborio rice (do non usage regular rice)
ii tablespoons butter
1/4 loving loving cup grated Parmesan cheese (not the powdered kind)

Bring the chicken stock to a boil inward a sauce pan, over high heat; cutting downward the rut to depression too as keep the chicken stock hot.

Heat ii tablespoons butter inward a large, heavy bottomed saucepan over medium high heat.  Add the onion too as garlic; educate too as stir until the onion begins to turn golden brownish at the edges, virtually ii minutes.
