Garlic Smashed Potatoes With Bacon


Ingredients:
i lb "baby" Yukon Gold potatoes
i tablespoon butter
2 1/2 tablespoons olive oil
2 cloves garlic minced
2 slices thick cutting bacon, cooked together with cutting into 1/4 inch pieces

Directions:
Preheat oven to 450. Bring a large pot of salted body of water to boil. Cook the potatoes until fork-tender. Place on a parchment paper together with purpose a spud masher to lightly "smash" each spud until the pare cracks.
